From the main screen in pine, go to (S)etup, then (C)onfig.  Change
the 'User Domain' to your domain name.

Alternatively you can edit ~/.pinerc and change 'user-domain' to your
domain name.

If you want this automated when an account is created, you'll probably
need to write something that creates a generic pinerc file for the
user with the domain name in it.
