Sendmail used as MTA on BlueQuartz doesn't deliver mail into Maildir format.

To do that you shoud use maildrop.
For this :

1. install maildrop
2. configure sendmail's mc file
3. rebuild sendmail.cf

The option in sendmail.mc should be similar to :
[...]
FEATURE(`local_procmail', `/usr/bin/maildrop',`maildrop -d $u')dnl
[...]

But one important problem is maildrop do not build the Maildir tree, and
this directories must be created before any mail delevery.

I've heard about a maildroprc that build the Maildir tree, but can't
find where :(
Or you can make some change in BQ's script use to create user to call
maildirmake.

Then you should use an POP/IMAP daemon that support Maildir format.
(Courier-imap ?)

So this is possible but not easy.

Best regards,
Hug
