I wouldn't change sendmail.cf itself but change sendmail.mc
(there should be a line "dnl define(`SMART_HOST',`smtp.your.provider')"

after changing sendmail.mc run "make" in that directory and "service  
sendmail condrestart"

btw: you should use the gui for that ... :-)
