Not sure that just copying the files is a good idea, I think format is
different.

If only a few users I would use formail.
Make sure the old-server is not receiving mail for the domain.
Login to old server su to root
   formail -s sendmail <user1> (at mark) new-server.tld < /home/spool/mail/<user1>
